  3. 1 cebolla
  4. 1/2 puerro
  5. 4 tomates
  6. 1/2 rama apio
  7. 1 nabo
  8. 1/2 chirivía
  9. 6 ajos tiernos
  10. 6 espárragos trigueros
  11. 4 setas shiitake
  12. 1 hoja laurel
  13. 1/2 vaso vino blanco
  14. Eneldo o hinojo (hierbas al gusto)
  15. 1 litro caldo vegetal

  1. Aclarar bien las lentejas y dejarlas en agua fría unos 5 minutos. Pasado ese tiempo, poner en una cazuelita con agua y hervir durante 5 minutos. Después colar y reservar.
  2. En una olla con AOVE dorar los espárragos y los ajos tiernos. Retirar y reservar. Hacemos este mismo paso con las setas shiitake cortadas en láminas gruesas.
  3. En la misma olla, arranca el sofrito con la cebolla sazonada, rehogándola a fuego medio. Cuando esté transparente añadimos la calabaza y el puerro.
  4. En 5 minutos añadimos los tomates previamente pelados y despepitados. Cocinar suave durante 5 minutos.
  5. Añadir el vino blanco y subir el fuego durante 5 minutos. Pasado ese tiempo, añadimos las lentejas y removemos bien.
  6. Añadimos el nabo, la chirivía y el apio y cubrimos con el caldo de verduras.
  7. Añadir un poco de eneldo fresco o hinojo. Aunque puedes ponerle cualquier otra hierba/especia de tu agrado (en otra ocasión yo le puse estragón, romero o tomillo y quedó estupendo también)
  8. Lo dejamos cocinar a fuego suave tapado entre 1 hora y hora y media (en función del tamaño y variedad de la lenteja que hayais escogido)
  9. En los últimos minutos añadimos los ajos tiernos, espárragos y las setas que habíamos reservado.
