- Primeramente cortamos la media berenjena a trozos para poder cocerla mejor, yo le dejo la piel porque me gusta pero también se le puede quitar. La dejamos cocer unos 20 minutos, hasta que esté blanda.
- Mientras se va cociendo la berenjena, vamos cortando los filetes y la calabaza en trozos pequeños.
- Una vez blanda la berenjena, echamos un chorrito de aceite en una sartén y picamos dos ahítos medianos y lo echamos en la sartén, cuando el ajo vaya cogiendo color ya se puede verter la berenjena y vamos rehogandola. Una vez doradita echamos el lomo adobado en trozos y la calabaza, una pizca de sal y un poco de albahaca en especia. Vamos removiendolo hasta que todo coja color y se haga.
