- 1 patata grande o 2 pequeñas
- 2-3 zanahorias
- 1/2 puerro
- 1/2 boniato mediano
- 1/2 calabacín
- 150 gr calabaza aprox
- 6-8 hojas acelgas

- 2-3 quesitos tipo Caserío
- Sal
- Jengibre
- 1 litro agua

- Lo primero como siempre es preparar nuestros ingredientes... Pelar y lavar bien las patatas, zanahorias y boniato. Quitar corteza y pepitas de la calabaza. Al puerro siempre le quito la primera capa y lo lavo por si tiene tierra. Yo suelo pelar el calabacín, pero puedes dejar la piel si la lavas bien. Cortar los arbolitos de la coliflor y lavarlos también. Y lavar, cortar y quitar las hebras de las acelgas (yo uso en manojo y las pencas también, no solo la parte verde).
- Una vez tenemos nuestros ingredientes listos, ponemos el agua en una olla grande y profunda (yo suelo poner un litro de agua y voy poniendo todos los ingredientes menos la acelga y añado agua si es necesario hasta 2 cm de cubrir las verduras). Añadir un poquito de sal.
- Dejar cociendo 35-40. La acelga la añado cuando el agua lleve hirviendo 30 minutos.
- Una vez acabado yo dejo un ratito que se enfríe y así evitar quemaduras. Quito y meto en un bote el casi todo el caldo para aprovecharlo para sopa u otros platos como arroz u otro guiso.
- En la misma olla añadir jengibre al gusto y los quesitos y batir con cuidado con la batidora. También puedes echarlo en un procesador de alimentos. No deben quedar grumos. Probamos y rectificamos de sal o jengibre si queremos añadir más (cuidado que pica!).
