- En una olla ponemos los garbanzos, los cuales han estado toda la noche en remojo y luego hemos escurrido y lavado. La carne de pava, el tocino, el cordero y el blanco, previamente lavados con agua.
- Echamos el agua y ponemos al fuego, añadimos una cucharada de sal y una pastilla de avecrem de carne. Tapamos la olla, pero sin cerrar del todo.
- Desespumamos y una vez hecho esto, tapamos bien la olla y dejamos aproximadamente 7 cocinar minutos, si fuera en olla normal lo dejaríamos aproximadamente 1 hora y media.
- Mientras, hacemos un majado con el azafrán de pelo, los ajos y el perejil. Cuando podamos abrir la olla, añadimos el majado, al que le hemos añadido unas 4 cucharadas del caldo. Añadimos también todas las verduras (en trozos grandes) y las patatas.
- Tapamos de nuevo y dejamos de 7 a 10 minutos. Si fuera en olla normal, dejaríamos aproximadamente 30 min, hasta que veamos que los garbanzos y carne estén hechos. Servimos todo por separado.
