- 150 grs Calabacín
- 300 grs Calabaza
- 100 grs Tomate maduro
- 1 Cebolla
- 2 Dientes Ajo
- 750 ml Caldo Vegetal / 2 pastillas de caldo concentrado
- 2 Cucharadas Aceite de Oliva
- 250 grs Arroz
- 2 Cucharadas Licor de Anís
- 2 Cucharadas Jerez seco u otro tipo de vino
- 2 Cucharadas Zumo de Limón
- 4 Cucharadas Crema de Leche
- 1/2 Cucharadita Pimienta Blanca
- 1 Cucharadita Nuez Moscada
- 2 Cucharadas Perejil picado
- Azafrán
- Sal
Steps to make to make Risotto de Hortalizas Anisado
- Lavamos y escaldamos el Tomate. Lo pasamos por agua fría, pelamos y cortamos en daditos. Reservamos.
- Lavamos y pelamos la Calabaza, eliminamos las semillas y cortamos a daditos la pulpa. Hacemos lo mismo con el Calabacín, pero no lo pelaremos, para mantener el aporte de fibra de su piel. Reservamos ambos ingredientes.
- Pelamos y picamos la Cebolla y los ajos. Reservamos.
- Ponemos a calentar el caldo vegetal a fuego bajo, mientras haremos el sofrito:
- Calentamos el Aceite en una sartén o cazuela honda, añadimos la cebolla y sofreímos a fuego medio hasta que esté transparente. Añadimos el Arroz, mezclamos bien con el sofrito y añadimos el Ajo, Licor de Anís y Jerez. Cocinamos durante 2 minutos y añadimos un cucharón de Caldo Vegetal caliente.
- Agregamos al Arroz: los Calabacines, Calabaza y Tomate. Vamos añadiendo Caldo a medida que se va consumiendo. Cocinamos y removemos durante 15 minutos a fuego medio.
- Pasado el tiempo, añadimos el Zumo de Limón, la Crema de Leche, Pimienta Blanca, Nuez Moscada, Azafrán y Perejil. Corregimos de Sal si fuera necesario. Hacemos un último hervor de 5 minutos sin remover, siempre teniendo en cuenta de no quedarnos sin caldo, ya que queremos un arroz cremoso, no seco.
- Pasado el último hervor, retiramos del fuego y dejamos reposar 10 minutos tapado y ya podemos servir.
- Os quedará un Risotto con un sabor fresco y ligero. Podéis espolvorear Queso Rallado por encima o acompañarlo con una Salsa Tártara… depende del gusto de cada comensal…
